Gourmet fries are headed to Halidom Eatery, with Buena Papa Fry Bar expanding to Atlanta with an outpost at the upcoming food hall.

Husband-and-wife duo James and Johanna Windon are the team behind the concept, born during the pandemic when they were cooking a traditional Colombian dish and fries were used in place of rice – with a delicious result. Since then, the couple from Raleigh, North Carolina, has grown the brand and even appeared on Shark Tank.

The dishes feature fresh-cut potatoes and toppings showcasing a range of multicultural flavors, from the loaded-baked-potato-inspired Americano to the Colombiano, the flavorful flagship dish that features Colombian chorizo, fried pork belly, refried beans and more. They are also introducing a baked potato option to offer an additional vehicle for the proteins and toppings.

“A lot of our flavors are out-of-the-box things people have never tasted before,” James Windon said.

Buena Papa Fry Bar has multiple locations in North Carolina, as well as an outpost in Miami. According to the website, a location is also planned for Wayne, New Jersey.

James told What Now Atlanta they’re excited to be part of the diverse foodie city that is Atlanta.

“Like Raleigh, it’s a fusion of people, a fusion of cultures,” he said. “That’s where Buena Papa sits well. We’re excited to be within that melting pot.”

Buena Papa Fry Bar is part of the final round of tenant announcements for Halidom Eatery, which also includes Luca’s Brooklyn PizzeriaDeallo’s Seafood, Just Dogs ATLGrind Time Coffee Co. and Wasabi Sushi & Ramen.

The concepts join the previously announced food hall tenants, including Press Waffle Co.Mad Dads Philly’sMango Indian GrillLocale Island Eats and Luze Mexicano Cocina.

Located on Moreland Avenue, the art deco-inspired Halidom Eatery is slated to open this spring. It will include indoor seating for 320 guests, outdoor seating for 123 guests and an upscale bar. There will also be a private event space and a two-acre outdoor green space.
