Two-time James Beard Foundation Award-winning Chef Hugh Acheson has opened By George, the flagship restaurant of The Candler Hotel—a Curio Collection by Hilton—offering an all-day menu of cuisine largely influenced by traditional French cooking, at 127 Park PL NE.

By George is named after George E. Murphy and George Stewart, the original architects of the historic Beaux Arts Candler building circa 1906.
Serving breakfast, lunch, and dinner, the menu is matched by a French wine program with 20 selections by the glass and over 100 by the bottle, helmed by Acheson’s longtime Partner and Sommelier, Steven Grubbs.
Beverage Director Kellie Thorn, a BNIC Certified Cognac Educator and recent winner of Wine Enthusiast 40 under 40, is overseeing the restaurant’s Cognac and Armagnac offerings.
By George’s dinner menu, designed to share, is divided into sections: Fruits de Mer (Southern Oysters, Langoustine), Smaller (Vichyssoise, Escargot on Toast), Bigger (Georgia Trout, Steak Diane), Gratin, Sides, and Dessert (Apple Tarte Tatin, Pot de Crème).
Breakfast and ”Business Light Lunch” are served daily, ideal for guests on-the-go or more formal sit downs.
By George’s Light Business Lunch menu is available a la carte or buffet style, including a selection of sandwiches, soups, and salads.
The 3,000-square-foot restaurant is designed by Senior Interior Designer Callie Harris of Beck Architecture.
