At a September 7 NPU-B meeting, the license was deferred due to issues around traffic and parking.

Paul Lawrence of The Loop Development Group is principal of the new concept. Ali Ebrahimi, formerly of Southern Proper Hospitality Group‘s Gypsy Kitchen ATL, will serve as general manager. In an email to What Now Atlanta, Ebrahimi confirmed that Knife is in the works. “Though I will always consider myself part of the Southern Proper Hospitality family, we are solely focused on this project,” he said.

While Knife remains a tentative name, Ebrahimi shared that the concept will serve as a neighborhood restaurant centered around a culinary program with a world view of authentic Mediterranean cuisine. The beverage program will complement those efforts in creativity, originality and taste. He hopes to have it ready to showcase to friends and family in the early part of 2022.

License intel shows the restaurant will seat 140 and operate seven days a week from 3 PM to 12 AM. There are also “plans for an intimate outdoor cocktail area for guests to enjoy.”

The existing building, which has a total square footage of 10,000, does not currently have an operational kitchen, so significant renovation work will no doubt be taking place prior to its opening. The building was previously home to Windsor Rug Gallery.

The neighborhood that Knife is opening in includes such dining spots as premier steak house Bones, cocktail bar Whisky Mistress, and Havana Club ATL.

While the quality of food and beverage that will be offered is a focus of Ebrahimi’s, even more of a focus is that of the guest experience.

“Our guests are our family and we have taken every measure to ensure their time with us is valuable to them as it is to us,” he said. “But more importantly, we hope to build a culture that is not only guest-centric, but focused on the well being and quality of life for our staff and team members.”

Ebrahimi hopes the restaurant will be a pioneer concept in offering staff, both front and back, profit sharing as partners in the business.
