Casa Robles to Open in Roswell in Spring 2022

The Spanish-Latin restaurant which translates to "Oak House" is the latest concept from the Pernice brothers.

A new tapas and tacos restaurant will join Roswell’s dining scene early next year. An official statement from Casa Robles says the forthcoming concept will feature traditional Spanish tapas and bold Latin American influences from Chef Laura Orellana who was born in El Salvador and received her culinary training in Seville, Spain.

Located downtown at 45 Oak Street, Casa Robles is the latest restaurant venture from brothers Ryan and Dan Pernice of RO Hospitality. The group currently owns and operates three other restaurant concepts north of Atlanta – Table and Main and Osteria Mattone in Roswell and Coalition Food and Beverage in Alpharetta.

The Oak Street location was previously home to the The Whiskey Project, a modern American restaurant and bar, which closed in June to relocate to a new location in Crabapple.

“RO Hospitality is proud to announce its fourth restaurant venture, Casa Robles Roswell, located at 45 Oak Street in downtown Roswell due to open Spring 2022!” Ryan shared in a Facebook post.

A website has been set up for the restaurant and soon to be guests are invited to follow its Instagram and Facebook to be the first to hear updates and announcements. Based on captions teasing the menu, guests can expect such delicious eats as:

  • Fried croquetas with Serrano ham, Manchego cheese, and lemon aioli
  • Pulpo a la Gallega grilled octopus with potatoes and paprika sauce
  • Langostinos al Ajillo seared prawns with garlic sauce and parsley
  • Albóndigas pork meatballs served in Spanish tomato sauce
  • Pescaito Frito marinated fried cod with lemon aioli
  • Cochinita pibil, al pastor, and carne asada tacos with homemade tortillas
  • Parrillada Argentinian style grilled meats and sausages, potatoes, salsa gaucha, and chimichurri
  • Flan de Caramel orange custard with whipped cream and candied orange
  • Maize en Texturas corn cake with caramel popcorn and corn ice cream

Talk about mouth watering.

Orellana currently serves as executive sous chef at Osteria Mattone and is eager to bring her take on popular and not-so-much Spanish-Latin foods. The menu will also include a variety of beverages including spirits, creative cocktails, and wines from Spain, Portugal, and South America.

Casa Robles will feature a dining room that seats 56 and a bar that seats 16. A covered patio will include an additional 32 seats.
