V12 has taken shape over the BP gas station at 610 Spring Street, across from The Varsity.
“We built up. People ask, ‘What was this before?’ The sky,” co-owner Kelan Watson told What Now Atlanta.
She teamed up with her brother, Vinny Watson, and the rapper Quavo, of the group Migos, on V12. (The Watsons also operate Sovereign Sweets, a food, dessert and cocktail bar in Buckhead.)
They wanted to create a space for diners to put down their phones and raise their glass.
“We forget about that when we go to dinner. We find ourselves guilty of picking up our phones,” Watson said. “Mixing pleasure and entertainment with the high-end food, I think that alone turns it up a whole notch.”
The food program will be succinct; this won’t be the type of place with a menu so big it feels like an ancient text. But there will be something for everyone. Think steaks, pasta, seafood and even a mushroom steak for plant-based diets. Watson is particularly excited about the caviar experience.
The beverage program, which took three months to curate and perfect, will include handcrafted cocktails featuring vegetables and berries sourced from local farmers.
The 7,500-square-foot space features two private rooms that seat 30 people and offer VIP service. The team went for a high-end aesthetic with a twist.
“We like to keep everything classy, but bring in a little bit of edge as well,” Watson said.
Furniture from the Netherlands, Italy and Mexico fills the space, which is adorned with sleek metals, local art and a retractable roof. A makeshift Lamborghini – from a Migos performance on Jimmy Fallon’s talk show – serves as an epic centerpiece. There will also be lots of TVs for optimal sports-watching, which helps serve V12’s aim of creating an inclusive, communal and entertaining atmosphere.
“Between hockey, baseball, basketball, soccer, football, sports are always on,” Watson said. “That’s a commonality. Sports and art and music are three different things that bring people together, no matter your race, religion, background, your social class.”
V12 will have a soft opening on March 16, 2024. It will offer valet service as well as self-parking.
