A founder of Maple Street Biscuit Company is launching a new taco concept, and the first location is landing in Alpharetta.

Calico Cactus will offer breakfast, brunch and lunch, along with a full coffee program. There will be a new taco drop every other week to keep the options fresh. Chips will be served with freshly made four-cheese queso, and tacos will be served on tortillas made from scratch.

“You can see them being made out in front as you’re waiting in line. It’s possible the tortilla you’re seeing is the one that will be your taco,” founder Scott Moore said.

Moore founded Maple Street Biscuit Company in 2012 with Gus Evans. The company, which has several locations in metro Atlanta, was acquired by Cracker Barrel in 2019.

Moore said he started looking for a new way to serve the community through food – and the signs pointed toward breakfast tacos.

“We started doing research on, where are the trends? Where are people’s palates leaning toward?” he told What Now Atlanta. “Breakfast tacos have been really popular, especially in Austin, Texas.”

The restaurant is designed, and they are currently in the permitting process.

Calico Cactus will be located on the first floor of a three-story building at 100 North Main Street. The Alpharetta outpost will be the first location of Calico Cactus, and they are already in talks for a second location in Florida.

“The timing’s right for freshly made breakfast tacos and a full barista,” Moore said.
