Saint-Germain French Bakery Moving Forward In The Interlock

Plans have been submitted to the City to build the pâtisserie in the under-construction West Midtown mixed-use.

Saint-Germain French Bakery has taken the next major step in moving its planned storefront in The Interlock forward.

A permit application this week was filed with the City of Atlanta to buildout the pâtisserie in the under-construction West Midtown mixed-use development, at 1115 Howell Mill Road.

Building out the 1,669-square-foot first-generation space could cost $225,000, according to the official filing.

Saint-Germain has an existing outpost in Ponce City Market and is expected to open alongside the rest of The Interlock in fall 2020 joining Puttshack, Velvet Taco, Cathy’s: Gourmet Ice Cream and Cookies, and other F&B tenants.

The Interlock will also boast office, residential, a 161-key Marriott Tribute Portfolio boutique hotel, a rooftop concept from Slater Hospitality, and Georgia Technology Ventures.

A second phase for the development is in the works.
