Roxie’s Cookies is expanding its fresh-baked oatmeal goodness to a storefront location at 242 Stockbridge Rd, according to lease intel. The 1,200 square foot location is part of Creekside Plaza and replaces a pizza and sub shop, a site plan for the commercial shopping center details.
Roxie’s Cookies was founded by Bill Crumpler as a way to keep his great-grandmother, Roxanna Johnson’s, memory alive. It was from her that he developed his love for baking oatmeal cookies over 30 years ago.
“For me, baking oatmeal cookies is a way to recapture the warmth and care my great-grandmother gave me and many others,” Crumpler writes on the company’s website. “It is also a way to pass along the love of baking to the next generation.”
What sets Roxie’s Cookies a part from other cookie bakeries is that everything is vegan. Crumpler created a plant-based recipe of his great-grandmother’s traditional recipe without compromising the flavor. All cookies are 100 percent plant-based, dairy- and egg-free, and made by hand for a genuine old-fashioned homemade taste.
Sold by the dozen and in variety packs, Roxie’s Cookies offers traditional oatmeal, oatmeal white chocolate chip, classic oatmeal raisin, and oatmeal craisin. The company promises that their cookies “taste so good, you won’t believe it’s vegan.”
