Lei G Ho, the restauranteur behind Rice Restaurant and Sushi Bar in Cumming, is expanding into Atlanta with a new concept, Eight Sushi Lounge.

Eight is slated to open in the same plaza as Ford Fry’s The Optimist in the forthcoming Brady development, at 930 Howell Mill Road.

“Eight is going to revolutionize how Japanese food is viewed,” Windy Soenarto, a company spokesperson, told What Now Atlanta in a telephone interview Thursday.

“We’re putting a modern twist on what sushi bars and Japanese restaurants are.”

The family owned and operated restaurant will serve up dishes like Eggs Benedict, Japanese-style, with rice, seaweed, spicy tuna, a house-made sauce, and baked quail eggs.

Construction at the restaurant that gets its name from its location on Eighth Street and Howell Mill Road, is expected to begin at the end of April.

Eight is looking to open its doors in July or August, according to Soenarto.
