“Mei is the mastermind behind the tea recipes and Honey Bubble, and will be working closely with the chef that is pegged for the Consulate,” Hines told What Now Atlanta (WNA) in an email Friday.

The menu will be in “constant motion,” comprised of flavors from around the world.

“India, Japan, London, Kenya, China, Ireland, Brazil and Greece can all be visited in one sitting at The Consulate. The countries and dishes will be in flux weekly, with select staple favorites being permanent.”

The 3,300-square-foot space, at 10 10th Street, will be a “midcentury modern-fused” design with “global influences,” according to Hines.

The Consulate will replace the now-shuttered Red Apple Cafe April 2016.

In related news, Hines is planning a second location of Honey Bubble Tea (the original opened in Virginia-Highland in 2012.)

  1. The existing Honey Bubble Tea location is in Virginia-Highland – not Poncey-Highland.

Also – using the quadrant designation after the Tenth Street address would be helpful in pinpointing the location.

  2. Honey Bubble is a great concept. The owners know what they’re doing. This Restaraunt sounds like it will do great in that space.

  3. Honey Bubble is a wonderful space with wonderful teas and sweets. Looking forward to The Consulate and traveling the world one bite at a time! Thanks, Dixie
