A rendering of the project was unveiled Thursday alongside a new opening timeline.

Nacho Daddy will now open early-2019, at 3095 Main St., instead of in December as originally planned.

The restaurant, the fourth location for the brand, will serve Mexican-American cuisine including a variety of creative nachos and specialty cocktails.

Its 3,942 square-foot space will feature indoor and outdoor seating, rooftop patio overlooking the Parsons Alley outdoor amphitheater, 15 high-definition televisions and a kitchen where guests will be able to watch the chefs work.

“We’re excited to open in Duluth because of the strong sense of community that resides there,” Paul Hymas, president and managing partner at Nacho Daddy, said in the release.

“We focus on using as many local resources as possible, and we knew if we expanded to Duluth they would allow us the same opportunities. In addition, we were drawn to the work and careful revitalization that is happening at Parsons Alley and couldn’t be happier to be a part of such a beautiful redevelopment.”

The Duluth outpost will feature lunch, dinner and weekend brunch menus including 18 gourmet nachos, 14 margarita flavors and “The World Famous Original Scorpion Shot,” complete with an actual scorpion.

Additionally, the restaurant brand collaborated with local and national brands to create its own Nacho Daddy Patron Tequila, beer, and coffee.

Nacho Daddy Duluth will be open seven days a week.
