The 188-square-foot storefront near the Dunwoody mall’s food court will offer Thai Rolled Ice Cream using “fresh and organic” ingredients, Choi Thursday told What Now Atlanta in an email.

“The food generation is changing,” Choi said. “I want to create something special and different.”

As with other Thai Colled Ice Cream concepts, wet and dry ingredients will be placed and combined on a “cold pan” and turned into little rolls of ice cream, about the size of a roll of quarters.

The rolls are packed into a cup and then topped off with a variety of sauces and toppings.

Choi could open as many as four additional Ice Sensations this year. He and his team are currently scouting the Atlanta market for freestanding sites with a plan to franchise the concept.

The restauranteur’s strategy is to utilize a “high-volume” location like Perimeter Mall to create brand awareness before launching new locations.

“I can brand Ice Sensation faster from being in the mall especially with guests coming from all over,” Choi said.

“When people see Ice Sensation inside the mall, they’ll recognize us on the street.”

Ice Sensation could open late-June 2018, a date nearly four years in the making.
